Not everyone wants to take the full, 5-day Master Distiller Workshop. For those that are interested in only learning about the raw materials and fermentation aspects of craft distilling, this two-day course will meet your needs.

This fast-paced two day segment will vastly increase your knowledge of the art and science of creating alcoholic beverages.

Have you ever wondered what various raw materials can be used to make alcohol? Proper choice of raw materials can propel a craft distillery to huge success.

Did you know that water is a critical ingredient in the alcohol production process? A distiller’s ability to adjust water chemistry will be key to making good tasting spirits.

Are you curious as to how yeast is able to generate alcohol? An in depth appreciation of yeast is critical knowledge that a distiller must have.

These two days will turn you from a mere spirits drinker into a spirits connoisseur. Starting with a deep dive into the world of Microbiology, your journey over these two days will show you how and why materials such as grapes, fruit, molasses and cereal grains can be used to make alcohol. You will learn how grain is malted. You will learn how to adjust water chemistry. You will learn about the 4-T’s of equipment cleaning. You will learn about the “lock and key” model that governs enzyme activity. You will learn about the Kreb’s Cycle and the Fermentation Cycle.

You will use small scale home brewing equipment to make a mash of un-malted cereal grain using enzymes. For comparison, you will make a mash using malted cereal grain. You will then have a chance to work with distillery owner Mark Freeland to grind grain and make a full-size mash of malt barley on the 1000 liter mash/lauter tun.

You will emerge from this two day event fully capable of creating mashes at home. The ability to make your own alcohol at home (for personal consumption only…) will now be within your grasp.

If you are contemplating opening your own craft distillery, this two-day session will leave you with the critical knowledge you need to start making key decisions.
